Edamame Dip
Ingredients:
12 oz of shelled edamame, fresh or frozen
1/4 cup of yellow onion, chopped
1 large clove of garlic, chopped
1 tsp cumin
1 heaping Tbs miso paste
2 tsp thai chili garlic sauce
1 1/2 tsp salt
pinch of black pepper
2 1/2 Tbs of EVOO
2 1/2 Tbs of toasted sesame oil
Process:
if you are using frozen edamame you will need to thaw it in the microwave. I suggest putting it in a bowl with 1/4 cup of water and cooking it on high for about 4 minutes, tossing a couple times during cooking. Then drain off the water and let it cool in the fridge before going on to the next step
combine all ingredients in a food processor and blend until smooth (if you have a teeny tiny food processor like I do you may have to do it in two batches)
you will also probably need to scape down the sides of the bowl several times during blending
add more oil if the texture is not smooth enough for your liking
and add more salt/spices to taste
